Five on Friday

Whooo-Hooo! It's Fridayyy!
Usually I'm not this excited for the weekend especially when I really don't have shit going on, but for some reason I'm in much need of a break from this J.O.B.

It's been awhile but today I am linking back up for Five On Friday with the pretty Darci @ The Good Life.

{One} It. Is. Texas/OU weekend. Can I get a hell to the YES?!
I'm so excited to support from the comfort of my outside patio with an extra full glass of wine, instead of fighting all the crazy fans at the Cotton Bowl and State Fair. The Mr. and myself decided a few years ago we are just to cool old to hangout with the first year college students anymore. -Ha!

I assume I will still wear my UT dress...mainly because the Hubs LOVES me in burnt orange. -Hahaha!

{Two}
It was love at first sight when I saw these adorable duck bookends at Goodwill for $3 bucks! I'm really thinking about going crazy and turning them to glitter covered duckies.
What do ya'll think?

{Three}
These $89.00 Steve Madden riding boots! Aren't they uber cute?! I will be purchasing this beauties this afternoon while I'm hardly working at work!

{Four}
I bought and received this super duper cute makeup bag a couple weeks, but like I said it's been awhile since I've linked up. Anyways, Madi over at Madi May Design custom makes these adorable
makeup/travel bags in tons of different colors and print combos. Before I ordered I was a little worried it wasn't going to be big enough to hold all my products, but it is PERFECT! I can get everything in it and still feed my obsession for anything chevron print. :)

{Five}
I saw this quote on Pinterest and thought it was so spot on!

Sure hope all you beautiful people have a GREAT weekend!

Weekend Recap

I had all the intentions to be writing this post last night but thanks to a sore throat and achy body, it was a no go. You would assume my achy body was from a earth shattering hangover since it was my birthday weekend and all or my sore throat was from talking loudly in a crazy crowded bar. -Nope. Didn't happen. Whomp. Whomp. But I'm not complaining, instead my niece and her roommate came to visit from college, which was the hubs and I first experience with having college age "kids" who eat anything and everything in your kitchen. Since they came down to visit and it was my father-n-law's birthday the day after mine we decided to cookout fajitas Saturday night with some close friends and family. My awesome mother-in-law made homemade enchiladas, thankfully I refrained from eating all 75 enchiladas she brought. That's called extreme self control, people! I tried to indulge in some adult beverages but it to was a no go because I was to busy trying to be the hostess with the mostess. Eeeekkk! Which is another sign I'm turning into my mother! Apologizes for not taking pictures like a true blogger but I was taking my hostess duties very seriously Saturday night.

 All and all we had a good time...until...the hubs got the outdoor TV working just to watch the ass whooping that was UT vs BYU. Just sad. Just plain sad.

But I did get a picture of the beautiful roses and lilies I got this past week from my sweet hubby.

 I have a lot going on this week and some changes for the my blog coming up very soon, so be sure to stay tuned!
:)
Have a FABULOUS week!

Good Ol' Football Food

Heyyy Ya'll!
Even though the Dallas Cowboys had 6 effin' turnovers in Saturday's preason game, I'm STILL looking forward to football season! With football season I know comes cooler weather and more family and friend gatherings that of course involve FOOD! So I thought I would go through some of my favorite things to take or have at our football game watching parties.

Chuy's Jalapeño Ranch Dip

16 ounces Light Sour Cream
1 package (1 Oz.) Ranch Dip Mix
2 whole large jalapenos, roughly chopped
2 cloves garlic, minced
1/3 cup fresh cilantro
1 whole lime, juiced
2-4 Tbsp milk

Combine roughly chopped jalapenos, cilantro and garlic in the food processor.
Pulse until finely chopped. Add lime juice, sour cream and ranch mix.
Pulse until thoroughly combined.
Add milk, a tablespoon at a time, until you reach the desired thickness.
Pour into serving bowl and serve with chips

Spicy Chicken Tortilla Roll-Ups

Shredded chicken from rotisserie
1 can Ro-tel diced tomatoes, drained
12 oz cream cheese, softened
1 cup shredded cheddar or monterey jack cheese
1 clove garlic, minced
1/2 tsp cayenne pepper
1/2 tsp garlic salt

1/4 cup cilantro, chopped
6-8 large flour tortillas

In a mixing bowl, combine cream cheese, drained tomatoes, cheese, garlic, and cilantro. Mix together until well-incorporated.
Add cooled chicken and stir together.
Lay out tortillas and divide mixture evenly in the center of each. Spread into a thin layer leaving the edges clean.
Roll each tortilla tightly. Do not fold in the ends like you would with a burrito but leave them free. Use a sharp knife to cut into 1" thick slices and transfer to a serving platter. (The end pieces will likely unroll a little so just eat the extras).
Cover with plastic wrap and refrigerate until ready to serve.

Amazing Gumbo Dip

4 tbsp. unsalted butter
1 large bell pepper, seeded and diced
3/4 cup sliced okra pods
2 ribs celery, diced
6 green onions, chopped
1 clove garlic, minced
1 1/2 tsp. Cajun seasoning
1 1/2 lbs. large shrimp, peeled, deveined and chopped
8 oz. cream cheese
1/2 cup grated Parmesan cheese

Preheat the oven to 400˚ F
Melt the butter in a large skillet over medium-high heat.
Add the bell pepper, okra, and celery to the pan and sauté until beginning to soften, about 6 minutes.  Stir in the green onions, garlic, and Cajun seasoning.  Cook 1 minute more, just until fragrant.
Stir in the shrimp, cream cheese, and Parmesan.
Stir over low heat until the cream cheese is melted and everything is evenly mixed.
Spoon the mixture into a baking dish.
Bake for 25 minutes then serve with pita chips

Happy Monday!!
